My Favorite Chinese Broccoli Stir Fry

1 bunch Chinese broccoli, ends trimmed, thicker stalks cut in hal

3 tablespoons oyster sauce

2 tablespoons water

1 teaspoon fish sauce

1 teaspoon granulated sugar

3 garlic cloves, minced

1 tablespoon neutral oil

salt, to taste

Trim the ends of the Chinese broccoli and cut the thicker stalks in half lengthwise. Heat a large pot of salted water to a boil. In a small bowl, whisk together the oyster sauce, water, fish sauce, granulated sugar and garlic. Blanch the Chinese broccoli for 1 minute, at the same time, heat the oil in the wok over high heat. Use a spider (a wide shallow, wire-mesh basket with a long handle) to remove the broccoli from the water, allowing the excess to dry-off. Carefully lower the broccoli into the wok. The wok will steam and smoke. Add the sauce mixture and stir fry for 1-2 minutes. Season to taste with salt and serve immediately.
