Smash Burgers
1 pound ground beef, formed into 2-3 ounce patties

salt and pepper, to taste
yellow onions, thinly sliced
brioche bun
special sauce (recipe below)
Heat a griddle or cast-iron skillet over medium heat. Add the burger patties, season with salt and pepper, and top with a small mound of thinly shaved onions. Press down on the burgers to spread the patties to about ¼-inch thick. Flip the burgers over as soon as they are golden brown on the bottom. Top each patty with 1-2 slices of cheese and cook until the patty is golden brown and the cheese is slightly melted.
To serve, toast the buns (you can use a pat of butter if you want) until warm. Spread a little special sauce down on the cut sides of the bun. Top with 2 patties and close the bun.
For the Special Sauce:
1 cup mayonnaise
2 tablespoons ketchup
1 tablespoon Dijon
2 dashes hot sauce
¼ cup small diced or minced bread and butter pickles
Combine all ingredients.
