Fresh Blackberry Jam

1-pound blackberries

¾ cup granulated sugar

pinch kosher salt

2 tablespoon lemon juice, freshly squeezed

Place a small cookie sheet or plate in the freezer. Metal works best if you have it (you could even use a metal pie plate or cake pan.)

Combine the blackberries, granulated sugar, salt and lemon juice in small pot. Heat over low heat until the sugar dissolves. Raise the heat and bring the mixture to a boil. Reduce to a simmer and cook, stirring occasionally, smashing the fruit against the side of the pan as you stir. Once the mixture is nappe, about 20-30 minutes, spoon some jam on the plate in the freezer. If the jam sets instantly and winkles a little on the surface, it’s ready. If needed, continue cooking the jam over low heat and testing every 10 minutes or so. Make sure to stir often as the jam continues to cool. When the jam Is ready, remove from the heat and allow it to cool before storing.
