Candied Pecans with Cinnamon
1 egg white

1 tablespoon water
½ teaspoon vanilla extract
½ cup granulated sugar
½ cup light brown sugar
1 teaspoon salt
2 teaspoons ground cinnamon
4 cups pecan halves
Preheat your oven to 250˚F.
Line a baking sheet with parchment paper. Whisk together the egg white, water, and vanilla extract until frothy. In a separate bowl, combine the granulated sugar, brown sugar, salt, and cinnamon. Toss the pecans in the egg white mixture to coat evenly. Transfer the pecans to the cinnamon-sugar mixture and toss to coat evenly.
Arrange the coated pecans on the prepared baking sheet in a single layer. Bake the pecans for 1 hour, stirring every 15 minutes. Allow them to cool to room temperature before serving.
