Smash Burgers with Cheese
For the burgers:
Recommended Videos
1 pound ground beef, formed into 3-ounce patties
salt and pepper, to taste
nonstick cooking spray, for grilling
wax paper or plastic bags, for smashing
For serving:
American cheese
1 red onion, cut into thick strips, grilled in a pan until golden brown (see note)
special sauce (recipe below)
lettuce
tomato, sliced into thin rounds
seeded Martin’s potato bun
Preheat your grill.
To smash the burgers, place the patties between two pieces of waxed paper or two plastic bags. We used a tortilla press to smash our burgers but you can smash them using a heavy pan.
Make sure your grill is nice and clean and hot before grilling!
Season the burger patties with salt and pepper. Spray the patties with cooking spray and grill for about 2 minutes per side. Add the cheese and continue cooking until the cheese melts. Stack the patties two high and remove from the grill.
We served our burgers on seeded potato buns with plenty of special sauce, lettuce, tomato and grilled onions.
For the grilled onions:
We used a cast iron pan with holes made for the grill to cook our onions. You can drizzle them with a little olive oil and season with salt then grill until a little charred. You can use a cast iron pan or griddle as well. Alternatively, you can slice your red onion in rings and grill on both sides for a few minutes until lightly charred.
Special Sauce:
½ cup mayonnaise
2 tablespoons ketchup
2 tablespoon yellow mustard
A couple dashes of hot sauce
2 tablespoons chopped dill pickles
Mix together all ingredients in a bowl. Keep cold until ready to use.
