Buttermilk Panna Cotta in a Jar

2½ cups heavy cream

¾ cup plus 2 tablespoons granulated sugar

1 teaspoon vanilla extract or ½ vanilla bean, split

zest from 1 lemon

zest from 1 orange

1 tablespoon powdered gelatin

3½ cups buttermilk

Combine the heavy cream, granulated sugar and vanilla extract or vanilla bean, lemon and orange zest together in a pot. Heat the mixture until the sugar dissolves.

Meanwhile, place the powdered gelatin in a small bowl and bloom. Once the sugar dissolves, stir in the bloomed gelatin and whisk until completely melted. Let the mixture sit for 5-10 minutes then strain over the buttermilk. Whisk together. Portion the panna cotta into your serving vessels and place into the refrigerator to chill completely and set. Once set, mix the berry topping, top with as many berries as desired and enjoy.

For the Berry topping:

4 cups of your favorite berries, we used strawberries, blueberries, raspberries and blackberries

juice form ½ lemon

sugar to taste, we used about 2 tablespoons

Cut down your berries to make them similar sizes. We cut the strawberries into halves or quarters depending on the size, we cut the blackberries in half. Combine all berries in a bowl. Mix with the juice from half a lemon and as much sugar as desired.
