Broccoli Cheddar GrilledCheese
1 small head of broccoli

extra virgin olive oil,as needed
salt and pepper, totaste
1 garlic clove, finelygrated on a microplane
½ cup or so of finelygrated parmesan cheese
leaves from one sprig ofrosemary, finely chopped
1-2 tablespoons ofbutter, as needed
2 slices of briochebread
yellow cheddar cheese,sliced thin
nonstick cooking sprayfor the pan, if needed
Preheat your oven to 375-400˚F.
Trim the stalks off yourbroccoli so only about 2-3 inches remain. Thinly slice the broccoli from stem to the topof the stalk. The broccoli should be asthin as you can slice it without it falling apart. If you just washed your broccoli, make sure itis very dry before roasting in the oven. Arrange the broccoli on a baking sheet thathas been lined with parchment paper. Drizzlewith the extra virgin olive oil and season to taste with salt and pepper. Roast in the oven for 3-4 minutes then removeand brush on the grated garlic. Sprinklewith parmesan cheese and return to the oven. Roast the broccoli until golden around theedges and the parmesan cheese is melted and turns golden brown. Remove from the oven and set aside.
To build the grilledcheese, use a cast iron or heavy-bottomed oven-safe skillet. You can use an oven-safe nonstick pan, ifdesired. If you aren’t using a nonstick pan, you can use a little cooking sprayto lightly coat your pan. Heat your panover medium heat and add a pat or two of butter, let it melt. Shingle the cheese on one side of the bread,close your sandwich and cook for 2-3 minutes until golden brown on one side. Flip over to the other side and place in theoven. Cook for 3-4 minutes until thecheese is melted and bubbling and the bottom side of the bread is golden brown. Remove from the oven, open carefully andadd as much of the roasted broccoli as you like, close and enjoy.
