For the glaze:

4 ounces honey

1 ounce Dijon mustard

1 ounce soy sauce

8 ounces light brown sugar

8 ounces apple cider vinegar

2 star anise

1 clove

Remove your ham from the refrigerator about an hour before cooking to start to bring it up to room temperature.

Preheat your oven to 350˚F.

Line a rimmed baking sheet with aluminum foil for easy cleanup. Place a roasting rack over the foil lined sheet. Unwrap the ham, discard the glaze packet. Place the ham on the roasting rack. Cover with aluminum foil. Place in the oven and cook about 10-15 for each pound, until the internal temperature reaches 145˚F.

Combine all ingredients for the glaze in a small pot. Bring to a simmer and cook for 5-6 minutes over medium-low heat until the sugar is completely melted and the mixture begins to thicken a bit. Remove from the heat.

Carefully remove the ham from the oven. Generously brush the ham all over with the glaze and return to the oven, uncovered. Continue roasting for 15- 20 minutes, then brush remaining glaze on the ham. Continue roasting for 15-20 minutes until the glaze has caramelized on the outside of the ham.
