Chicken Wings with Homemade Blue Cheese Dressing

1 dozen chicken wings, flats and drumettes separated

Neutral oil (like vegetable) for frying

6 tablespoons butter

6 tablespoons Frank’s Hot Sauce

Celery sticks, for serving

For the Blue Cheese Dressing:

6 ounces blue cheese crumbles

1 cup of your favorite mayonnaise (I like Duke’s)

½ cup sour cream

¼ cup buttermilk

1-2 dashes Worcestershire

Preheat your oven to 200˚F.

Place the wings in a deep, heavy-bottomed pot (like a Dutch oven or similar). Cover the wings with oil. Gently warm the oil until it reaches 200˚F. Place the wings in the oven, covered, for about 90 minutes. The wings should be tender to a knife tip but not falling off the bone. Once tender, remove the wings from the oven and transfer to a wire rack that has been set over a rimmed baking sheet. Let the wings cool to room temperature then transfer to the refrigerator and chill until cold.

Meanwhile, let the oil cool completely. You can separate the oil from the released liquid of the chicken wings. Discard the liquid and save the oil for frying if it’s clean. Add additional oil until you have about 2 inches of oil in your pot. Heat the oil to 375 degrees. Remove the chicken wings from the refrigerator.

Melt the butter in a small pot or the microwave and whisk together with the hot sauce in a large bowl. Working in small batches, fry the wings a piece at a time, until golden brown. Be careful not to overcrowd the pan or the wings will stick together when frying. Once the wings are golden brown, remove from the oil and place in the bowl with the butter and hot sauce. Toss the wings until well coated. Serve immediately with blue cheese and celery.
