Ingredients:
- 2 tbsp granulated onion
- 2 1/2 tsp dried thyme
- 2 tbsp granulated garlic
- 2 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1 tsp cayenne pepper
- 1/2 tsp salt
- 2 tbsp coconut oil
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 2 tbsp honey
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 2 whole Scotch bonnet peppers
- 1 chicken leg quarter
Steps
1. Combine all ingredients (except chicken) in a food processor and blend until incorporated.
2. Rub the seasoning onto chicken.
3. Place the chicken on a 350°F preheated grill and cook for 15–18 minutes or until the chicken has an internal temperature of 165°F. Flip the chicken as needed to achieve consistent grill marks.

Cook time: 12-15 minutes

Ingredients
- 2 tbsp granulated onion
- 2 1/2 tsp dried thyme
- 2 tbsp granulated garlic
- 2 tsp ground allspice
- 2 tsp ground black pepper
- 1/2 tsp ground cinnamon
- 1 tsp cayenne pepper
- 1/2 tsp salt
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 2 tbsp coconut oil
- 1 chicken leg quarter
Steps
1. In a small bowl, thoroughly combine all the dry ingredients. Coat the chicken lightly with oil, then rub the seasoning onto the chicken and allow it to marinate for up to 24 hours in the refrigerator.
2. After 24 hours, remove chicken from the refrigerator and place it in a 350°F preheated convection oven for 12 minutes or until 165°F.
3. Remove the chicken from the oven and allow it to rest for 5 minutes.
