Rodent seen in South Florida restaurant/nightclub that wasn’t ordered shut

PEMBROKE PARK, Fla. – Below is a list of places inspected by the Florida Department of Business and Professional Regulation last week.

Some were ordered shut due to violations that could make the public sick.

State records show four kitchens were ordered shut.

To our surprise, a live rodent was spotted inside the kitchen at the Polo Bar and Grill in Pembroke Park and this establishment was not ordered shut.

No kitchens were ordered shut in Miami-Dade County or the Florida Keys last week.

All the places ordered shut were allowed to re-open following an ordered clean-up and then a re-inspection.

“Roach activity present as evidenced by live roaches found. 1 large roach on wall directly above clean equipment rack. 4 large roaches in paper towel dispenser at kitchen hand wash sink 1 small roach inside hand wash sink in kitchen. 1 small roach on right side of kitchen hand wash sink, crawling underneath kitchen rack on floor. 1 small roach in front of white single door fridge next to ice machine 1 small roach on clean dish rack next to kitchen flip top 2 small roaches at triple sink area on wall and faucet.”

“Food stored on floor. In walk in freezer, box of raw meet stored in direct contact with floor.”

“Bowl or other container with no handle used to dispense food. 1)Inside ice machine, broken ice scoop with no handle, used to scoop ice 2) bowl found in 4 inch pan on hotline for black rice and peas.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top; cooked chicken (45F - Cold Holding); cooked pork (45F - Cold Holding); cooked beef (53F - Cold Holding). Per operator foods not portioned or prepared today, in unit less than 3 hours. Operator moved to reach in cooler for quick chill. Observed kitchen flip top not working as intended.”

“Food manager certification expired.”

“No proof of required state approved employee training provided for any employees.”

“Roach activity present as evidenced by live roaches found. Approximately 6 live roaches by door at dish washing area- under and around container with dirty linens. Another 2 live roaches on floor at prep area between Cook line and expo.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Walk in cooler - raw beef (49-50F); raw chicken (49-50F); raw shrimp (49-50F); cooked rice (50-55F); cut cabbage (50-55F). Per operator items were held in walk in overnight. No items prepped or portioned today. Advised operator to immediately cook the raw chicken and raw beef. Operator began cooking beef and chicken.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Front counter - potatoes (105-108F - Hot Holding); green beans (99F - Hot Holding). Per operator items placed out approximately 3 hours ago.”

Observed approximately 4 live flying insects resting on shelf above mop sink. Observed approximately 10 live flying insects flying in air at back storage room.”

“Stop Sale issued due to food not being in a wholesome, sound condition. Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee handling raw tuna. As per employee, product will be served raw.”

“Unclean building components, attachments or fixtures. Observed hoods soiled with heavy accumulation of grease at cook line. Repeat Violation.”

“Wall soiled with accumulated grease, food debris, and/or dust. Observed walls soiled with old food debris at server’s station and cook line. Repeat Violation.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Observed interior of ice bin at server’s station soiled with black substance.”

“Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Raw pork over ice cream back storage.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed bean sprout (58F - Cold Holding) at room temperature at cook line. As per employee, product placed at room temperature less than 30 minutes. Advised employee to add more ice to container. Observed crab sticks (53F - Cold Holding) inside display reach in cooler at sushi area. As per employee, product placed inside unit 15 minutes prior.”

“Employee failed to wash hands before putting on gloves to initiate a task working with food.”
