The inspection, conducted on March 4, 2025, identified 27 infractions that pose serious risks to public health, including insect infestations, improper food storage, and unsanitary conditions.
According to the Food Safety Inspection Report, live roaches were found in the kitchen, particularly around the reach-in coolers.
Due to this infestation, a Stop Use and Sale Order was issued, requiring the bakery to address the issue immediately before resuming operations.
The inspection uncovered several violations that could contribute to foodborne illnesses. Some of the most serious findings include:
*Mold-Contaminated Food: Bread stored near the food service area was found with mold-like substances and was voluntarily discarded.
*Improper Storage of Raw Meats: Raw chicken was stored over raw fish, and raw shell eggs were placed above ready-to-eat foods, increasing the risk of cross-contamination. These items were either discarded or relocated.
*Unsafe Food Temperatures: Several temperature-sensitive foods were not maintained at safe levels. Raw beef, turkey, and fish were stored in a reach-in cooler at 46-50°F, exceeding the required 41°F limit. Additionally, empanada mixture and cow’s foot on the steam table were found at unsafe temperatures, leading to voluntary disposal.
*Improper Sanitization Practices: An employee was observed washing a ladle without proper sanitization before use. Additionally, a kitchen mixer was found with encrusted food residue from the previous day, prompting a Stop Use Order for the equipment.
The bakery lacked a legally required certified food protection manager on staff.
The backroom’s reach-in cooler failed to maintain the required temperature, leading to another Stop Use Order.
Shelving units and kitchen surfaces had excessive grease and food debris buildup.
A re-inspection is scheduled for March 18, 2025, during which Sandy’s Bakery must demonstrate full compliance with food safety regulations. If violations persist, the bakery could face fines, further operational restrictions, or even permit suspension.
