Chipotle, Toasted Bagelry, Jaxson’s, Steak ‘n Shake hit the Dirty Dining list

Below is a list of places inspected by the Florida Department of Business and Professional Regulation last week.

Some were ordered shut, others required a follow-up inspection.

All the places ordered shut were allowed to re-open following an ordered clean-up and then a re-inspection.

Observed 1 live fly land on a bag of napkins, 1 live flying insect in the ware wash area, 1 live flying insect flying by the entrance of the kitchen to the dining room, 4 live flying insects flying nearby the prep table in front of the cook line, 4 live flying insects on a shelf with containers of honey, vinegar, and sugar in the prep area nearby the fryer in the kitchen, and approximately 25+ live flying insects on the shelves with clean pans, and approximately 15+ live flying insects on the shelf and clean lids by the dishwasher.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Front counter: cut lettuce (67F - Cold Holding); cut spinach (64F - Cold Holding) as per operator, placed on the line 1 hour before the inspection. Observed the unit not on. Repeat Violation.”

“Clean utensils or equipment stored in dirty drawer or rack. Ware wash area: observed clean pans and lids on shelves with small flying insects.”

“Floor area(s) covered with standing water. Women’s restroom with standing water. Observed employee clean the floor during the inspection. Repeat Violation.”

At this rate cooling will not be met. Observed display case does not close. Operator placed milk on ice to facilitate for proper ambient cooling. 2. “Floor soiled/has accumulation of debris. Observed cigarette buds and bottle caps on floor underneath display cooler at front counter. Observed floor heavily soiled with old food debris near stove and fryers.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed microwave at cook line soiled with old food debris.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed exterior of rice, beans, and salt containers soiled with food debris at cook line. Repeat Violation.”

“Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed covered cooked pasta 90F Cooling at walk in cooler, as per cook product cooked more than two hours prior. Advised cook to reheat product to 165F.”

“Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed ice machine bin with a black substance like mold buildup.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Observed reach in cooler soiled with food debris under preparation table at kitchen rear. Observed soda nozzles soiled with black substance at server station. Observed interior of sliding door reach in cooler at bar heavily soiled.”

“Dish machine not sanitizing properly. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Observed Dishwasher (Chlorine 0ppm). Repair technician arrived during inspection. Machine retested at 50 ppm.”

“Floor soiled/has accumulation of debris. Observed all throughout kitchen preparation areas/dishwasher area and halls.”

“Hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling. Observed heavy accumulation of grease on hood walls/filters.”
