Rodent issues found inside popular Broward restaurant

Below is a list of places that were inspected by the Florida Department of Business and Professional Regulation last week.

Records show six places were ordered shut.

All the places ordered shut were allowed to re-open following an ordered cleanup followed by a re-inspection.

“Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. -Observed approximately 20 live flying insects in wait station next to steam table. -Observed approximately 10 live flying insects landing on soda nozzle and clean cutting board in bar. Repeat Violation.”

“Insect control device installed over food preparation area. -Observed bug zapper installed in wait station above clean cups and take out containers. Repeat Violation.”

“Accumulation of dead or trapped birds, insects, rodents, or other pests, in control devices. -Observed accumulation of dead flies in bug zapper device.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed roast beef cold held at 48-52F in walk in cooler. Per operator, beef cooked and placed in unit from yesterday. Roast beef did not remove from unit since.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed tuna salad cold held in flip top cooler at 45F. Per operator, item transfer from walk in cooler to flip top cooler 2 hours prior to the inspection. Operator place tuna salad on ice bath. -Observed roast beef cold held at 48-52F in walk in cooler. Per operator, beef cooked and placed in unit from yesterday. Roast beef did not remove from unit since.”

“Food-contact surface soiled with food debris, mold-like substance or slime. -Observed accumulation of black mold like substance buildup on can opener blade. Repeat Violation.”

“Raw animal food stored over/not properly separated from ready-to-eat food. -Observed raw pooled eggs stored over cut tomatoes at flip top cooler.”

“Bowl or other container with no handle used to dispense food. -Observed no handle bowl used to dispense cheese at flip top cooler. Repeat Violation.”

“Food stored on floor. -Observed bag with flour stored on dry storage floor. -Observed cases with various food items stored on walk in cooler and freezer floor. Repeat Violation.”

“Dish machine chlorine sanitizer not at proper minimum strength. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Observed chlorine sanitizer solution at dishwashing machine at 00 ppm.”

“Accumulation of debris on exterior of ware washing machine.”

“Wall soiled with accumulated grease, food debris, and/or dust. -Observed accumulation of black mold like substance buildup on walls in dishwashing areas.”

“Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. -Observed employee dispense cut tomatoes and cut onions to sandwich bun with bare hands.”

“Employee rubbed hands together for less than 10-15 seconds while washing hands. Employee also wash his hands without soap.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at 11:52 a.m. mahi hot held at 122F in steam table. Per operator, fish cooked at 11:22 a.m. Operator reheat fish to 168F.”

“Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. -Observed at 12:45 p.m. , no time mark on butter held using time as a public health control. Operator determined that butter transfer to area at 11:00 a.m.”

“Hand wash sink used for purposes other than handwashing. -Observed handwashing sink in kitchen used as dump sink evidence by waste ice and coffee residue found inside.”

“Menu contains an item made with a raw/undercooked animal food as an ingredient and description of item does not inform consumer of raw/undercooked animal food ingredient. Observed tuna poke dish with raw fish.”

“Raw animal food stored over or with unwashed produce. Raw shell eggs over box of whole tomatoes in walk in cooler.”

“Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw fish over cooked turkey in walk-in cooler.”

“Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Observed employee wash and rinse a stainless steel bowl without sanitizing three component sink was filled with dirty dishes.”

As per operator the product was outside at cook line for less than 2 hours. The operator moved the product to walk in cooler for rapid cooling. And cheese (45F - Cold Holding); cut tomatoes (46F - Cold Holding); cooked chicken (57F - Cold Holding) at reach in coolers preparation area. As per operator for less than two hours. The products were moved to a reach in freezer for rapid cooling. And raw chicken (61F - Cold Holding); fritas burgers (58F - Cold Holding) at drawers reach in cooler at cook line. As per operator for less than two hours. Operator moved the products to the walk in cooler for rapid cooling. And precooked potatoes (50F - Cold Holding); ham (59F - Cold Holding) at reach in cooler located in front of steam table. Operator moved the products to a reach in cooler for rapid cooling.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chorizo (122F - Hot Holding); French fries (125F - Hot Holding) at preparation table under the lamp. As per operator was made less than one hour ago. And mash plantains (117F - Hot Holding); mash potatoes (124F - Hot Holding); tamales (130F - Hot Holding) at oven. As per operator for less than one hour. Operator moved the products to the walk in cooler for cooling instead of reheating. And ground beef (109F - Hot Holding); shredded beef (112F - Hot Holding) at steam table.
