Rodent found in one restaurant, 150+ droppings found in another

BROWARD COUNTY, Fla. ā€“ Records show three South Florida restaurants were ordered shut last week by the Florida Department of Business and Professional Regulation.

Over 150 rodent issues were found in one of those restaurants in Pompano Beach.

Below is a list of places inspected by the Florida Department of Business and Professional Regulation last week.

All the places ordered shut have been allowed to re-open following an ordered clean-up and re-inspection.

ā€œStop Sale issued due to food not being in a wholesome, sound condition. Observed 2 live flies laying on a cook duck and cook pork by the hot holding area. Stop sale was issued.ā€

ā€œLive, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed approximately 10+ live flies by the duck hot holding unit. Observed 1 live fly on foam single service item, item was discarded. Observed 2 live flies laying on a cooked duck and cooked pork by the hot holding area. A stop sale was issued. Observed approximately 25+ live flies by the dishwasher area.ā€

ā€œDead roaches on premises. Observed 1 dead roach by the exit door.ā€

ā€œFood-contact surface soiled with food debris, mold-like substance or slime. Observed salt and sugar food containers soiled.ā€

ā€œCardboard used on floor as anti-slip measure not replaced every day or when heavily soiled, whichever comes first. Throughout the kitchen. Repeat Violation.ā€

ā€œFloors not constructed to be easily cleanable. Throughout the kitchen.ā€

ā€œFood stored on floor. Observed case of noodles and pork on the floor in the walk in cooler and cooking oil on the floor.ā€

ā€œNonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets in the reach in cooler, walk in cooler and walk in freezer soiled.ā€

ā€œTime/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed shrimp (47F - Cold Holding); beef (49F - Cold Holding); scallops (48F - Cold Holding); chicken (50F - Cold Holding); bottom: wonton (51F - Cold Holding); egg roll (50F - Cold Holding); chicken wings (49F - Cold Holding) stored in the reach in cooler at the cook line for less than 2 hours, operator placed items under ice on the top portion of the cooler, items on the bottom were placed back into walk in cooler.ā€

ā€œTime/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed duck (126F - Hot Holding); chicken (117F - Hot Holding); pork ribs (133F - Hot Holding) stored in the hot holding unit for less than 1 hour, as per operator.ā€

ā€œNo currently certified food service manager on duty with four or more employees engaged in food preparation/handling.ā€

ā€œRequired employee training expired for all employees.ā€

ā€œTime/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Cooked chicken (51F), cooked pork (50F); lalo (53F); cooked vegetable (51F); cooked beef (51F); rice (51F) stored in the walk in cooler overnight per operator. Not prepared or portioned today. Walk in cooler door damaged, will not properly open or close.ā€

ā€œTime/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Green banana (115F - Hot Holding), prepared today and stored at the cook line under no temperature control.ā€

ā€œWall soiled with accumulated grease, food debris, and/or dust, wall behind cook line in kitchen.ā€

ā€œFood storage container lid cracked or broken, on black bean storage container in kitchen.ā€

ā€œHand wash sink used for purposes other than hand washing. Observed empty red bucket in basin of hand wash sink in kitchen.ā€

ā€œLive, small flying insects in kitchen, food preparation area, food storage area and/or bar area. 1. Approximately six live, small flying insects observed flying in dry storage area. 2. One live, small flying insect observed flying around cook line in kitchen.ā€

ā€œCeiling tiles and vents soiled with accumulated food debris, grease, dust, or mold-like substance throughout kitchen, food prep, and dry storage areas.ā€

ā€œEmployee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed package of cigarettes stored on food prep table opposite cook line.ā€

ā€œFloor soiled/has an accumulation of debris, underneath cook line.ā€

ā€œOuter openings not protected with self-closing doors. Large gap around back door in storage area.ā€

ā€œRaw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed tray of breaded raw chicken livers stored over boxed mozzarella sticks and breaded okra in the reach in single door freezer in the kitchen.ā€
