Rodent found in 1 restaurant, rodent gnaw marks found on pasta at another

Below is a list of places that were ordered shut by inspectors with the Florida Department of Business and Professional Regulation last week.

Rodent issues, including a dead rodent, were found in two of the places ordered shut.

“Stop Sale issued due to food not being in a wholesome, sound condition. 2 - 10 pound bags dry pasta on dry storage shelf with gnaw marks.”

“Rodent activity present as evidenced by rodent droppings found. Dry storage - Approximately 8 rodent droppings on dry storage shelving packaged items (spices, containers of pickles, cranberries and powdered sugar.) Dry storage - 4 rodent droppings on boxes of twinkies and Oreos. Approximately 20 on dry storage floor in corner next to door to restrooms. Dry storage room is directly open to kitchen. Approximately 17 rodent droppings on top of dish machine. Operator immediately began cleaning/sanitizing all areas.”

“Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. 2 small flying insects on top shelf of cook line - next to loaves of bread. Operator exterminated and cleaned the shelf. Approximately 5 small flying insects on cases of potatoes next to triple sink. Operator removed all items. 3 small flying insects at expo station on wall next to bottles of wine. Approximately 5 small flying insects by office door next to bag in box items.”

“Accumulation of debris on exterior of ware washing machine.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cookline - 2 door - True - cooked ribs (45-46F); deli turkey (45-46F); hot dogs (45-46F). Per operator items held in unit less than 3 hours. Operator moved items to walk in to quick chill. Cook line - flip tops - cheese (45-50F). Per operator, item in unit approximately hours.”

“Floor soiled/has accumulation of debris. Under triple sink, around and under all cooking equipment, under all dry storage shelving.”

“Interior of refrigerator or freezer in disrepair/has exposed insulation. 2 door True at cook line. Repeat Violation.”

“Approximately 3 small flying insects in kitchen by triple sink. 1 small flying insect on top shelf - cook line shelf. Approximately 5 small flying inspects on tea brewing machine. Approximately 5 small flying insects by bag in box at entrance to office.”

“Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed ice machine interior soiled.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed blanched fries (54F - Cold Holding) next to fryer station, placed. Ob out 90 minutes ago ac to manager Manager put blanched potatoes inside walk in cooler for rapid chill.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.”

“Employee washed hands with no soap. Observed employees washing hands with no soap.”

“Roach activity present as evidenced by live roaches found. Observed 4 live roaches, 1 roach crawling under wok at kitchen, one 1 roach crawling on front of walk in freezer, 1 roach crawling on wall above 3 compartment sink, 1 roach crawling by racks next to back door to the outside.”

“Dead roaches on premises. Observed dead roaches, 1 dead roach on bucket at storage area and 11 dead roaches under preparation tables at kitchen.”

“Time/temperature control for safety food thawed in an improper manner. Observed frozen pork ribs thawing in standing water at 3 compartment sink.”

“Buildup of food debris/soil residue on equipment door handles. Observed door handles soiled on walk in coolers and freezer.”

“Floor soiled/has accumulation of debris. Observed floor soiled with grease and food residue under cooking equipment at kitchen , also inside walk in cooler floor soiled.”

“Food stored on floor. Observed pork ribs , raw pork , raw chicken, boxes with cabbage stored on the floor inside walk in cooler , walk in cooler #2. Raw chicken, shredded cabbage, soy source stored on the floor. Repeat Violation.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at preparation table across from walk shredded cabbage (53F - Cold Holding); raw beef (49F - Cold Holding); raw chicken (49F - Cold Holding); cooked noodles (55F) according to cook placed about 1 hour ago, employee put ice bags on food containers to cool dawn.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener soiled with grease Repeat Violation.”

“Hand wash sink not accessible for employee use at all times. Observed plastic containers with frying oil blocking hand washing sink.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed exterior of oven soiled , hood filters soiled, door gaskets in walk in cooler and freezer. Soiled.”

“Objectionable odors in bathroom or other areas of the establishment. Observed strong odor by ware-washing and mop sink area.”
