Roach, fly & cleanliness issues found inside popular Coral Gables restaurant

CORAL GABLES, Fla. – An alert Dirty Dining viewer was alarmed by a sign in the window at Canton Chinese in Coral Gables earlier this week.

The sign said “temporarily closed,” but there was no explanation as to why.

That viewer contacted us and, sure enough, his intuition was correct.

Canton Chinese was ordered shut by a state inspector Monday.

The inspection was based on a complaint.

Below is a list of some of their violations.

Canton was allowed to re-open following an ordered cleanup and re-inspection.

“Rodent activity present as evidenced by rodent droppings found. Observed approximately 10 rodent droppings by prep sink located at second floor.”

“Roach activity present as evidenced by live roaches found. Observed approximately 3 live roaches by reach in cooler at front counter by sushi station. Observed also at second floor approximately three live roaches by two compartment sink. Observed one live roach on floor by the dessert unit at main seating area.”

“Dead roaches on premises. Observed approximately 5 dead roaches inside reach in cooler at sushi station.”

“Roach excrement and/or droppings present. At kitchen above hand sink located in the corner by the fryers.”

“Live, small fly insects at food storage area. Observed approximately 30 plus flies coming out and around the drain in that room.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Chicken at 63°F, cut lettuce 54°F.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Sauce containers soiled.”

“Accumulation of black/green mold-like substance in the interior of the ice machine/bin.”

“Accumulation of debris on exterior of ware washing machine.”

“Buildup of food debris/soil residue on equipment door handles. Handles soiled at unit located at kitchen.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed microwave at kitchen soiled.”

“Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee manipulates coleslaw without gloves, later put gloves but no hand wash.”

“No soap provided at hand wash sink by cook line.”
