Observed 3 rodent droppings in prep area on unused old sandwich press . Observed 2 rodent droppings on shelving above food prep table that is holding uncovered flour, bread crumbs and ground plantains . Observed 1 rodent dropping on dish rinse table next to dish machine.”
“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. shrimp (55*F - Cold Holding); potato salad (55*F - Cold Holding); coleslaw (55*F - Cold Holding) relocated into walk in cooler less than 3 hours in unit.”
“Food-contact surface of French fry cutter soiled with food debris. Can opener blade is soiled.”
“Storage room Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or ware washing areas. Exposed wood rafters in storage room where chest freezer are and in Pizza room and in kitchen above cook line and prep areas.”
