New South Beach spot puts unique spin on Japanese classics

MIAMI BEACH, Fla. – If you’re a fan of Japanese cuisine, there’s a new spot in Miami Beach that’s putting a unique spin on tradition.

Japón, which is Spanish for Japan, is reimagining classic dishes with influences from around the world.

The space is small, but the flavors are bold. Japón is nestled inside the Setai Hotel at 2001 Collins Ave. on South Beach, where the rules of tradition come with a twist.

Ivan Monzon, executive sous chef, says, “We take the basic and traditional recipes and we transform (them) and add new touches from all around the world.”

That transformation happens in the kitchen with Monzon. Dishes include a sea bass that’s been marinated for 48 hours in bold miso and charred tomato paste.

They like to blend the vibrant cultural heritage of Japan with the refined elegance of modern luxury.

Sitting in the outdoor courtyard is where you can get dinner and a show. But beyond the main dining room, Japón offers an elevated experience.

“This is the Kyoto bar for the Kyoto room,” says Monzon. The private room seats up to 14 guests. “We call this the Kyoto room because Kyoto is a cultural capital of Japan and we have some of the artwork from 1900.”

For the right price, it includes a seven-course menu like the spinach salad to start and the showstopper, F1 Wagyu.
